Strawberry Muffins: Mmmm Fay!

I was looking for a recipe to use up my strawberries that were starting to go bad and suddenly wondered if there was such a thing as strawberry muffins. Guess what, there is! Hooray and yum. These are pretty darn good. I adapted this recipe here from allrecipes and was pretty happy how it turned out. Oh, and FYI: this was little less than a pound of strawberries to do both the muffins and butter.


Strawberry Muffins

Ingredients:
1/4 c oil
1/2 c milk
1/2 t vanilla
1/2 t salt
2 t baking powder
1/2 c sugar
1/4 c packed brown sugar
1 3/4 c flour (I mostly used all purpose but used 1/4 c of wheat flour- I ran out of white and was too lazy to run downstairs to refill it. I'm glad though because it was yummy.)
1/2 t cinnamon
1/8 scant t nutmeg
1 1/2 c chopped strawberries (if using frozen, thaw slightly then chop)

Topping:
2 T sugar
1/4 t cinnamon

Directions:
1. preheat oven to 375 degrees F. Spray your muffin tins or use paper liners
2. In a small bowl, combine the first 4 items and beat lightly. In a large bowl, mix all the other items except the berries. When mixed, add berries and stir to coat. Pour in milk mixture and stir together.
3. Fill muffin cups. Sprinkle the topping over the muffins evenly.
4. Bake at 375 for 20-25 minutes (mine were done at 23) or until the tops bounce back to the touch. Cool 10 minutes and remove from pans. Makes 12. Serve with Strawberry Butter.


Strawberry Butter

4 T room temperature butter
1/2 c chopped strawberries
1 t powdered sugar

Throw everything in the food processor and blend.


Ease of Preparation: B+
  • Not hard, but when I want muffins I want them NOW. There's the chopping of the berries and the dumping of everything else. Not hard.

Taste: A- (Matt), A (Joy)
  • These were REALLY good and so, so good warm.
Overall: A-
  • The only thing I would do differently is maybe try cream cheese in the Strawberry Butter instead of the butter. And then maybe change the name to, say, Strawberry Cream Cheese? Just going out on a limb.
