May Budget Review

I'm not a regular grocery shopper. I buy stuff before I even need it, matching manufacturer coupons with store sales. This way I'm able to "shop" from my own pantry and pay a fraction of retail with items I use. No, we will not use all that gum this month, but we will use it this year. When I make meals for us, I menu plan around what we already have on our shelves and in the freezer. There are occasional items I have to pay full price for, but they are the exception as I build up my food storage with stuff we actually use, all for less then I used to spend just to get us by every month.

This month I was able to stock up on salad dressing, chicken, marshmallows, rice, cheese, tuna, hummus, cool whip, butter, diapers, sour cream, Popsicles, foil, beef, salsa, spices, soy sauce, treats, caprisuns, veggies, toilet paper, chips, wipes, dog food, gum, cereal, yogurt, chocolate chips, make up, meds, green chilis, pasta sauce, ziplocs, bathroom cleaner, Worcestershire sauce, maxi pads, marinade, vitamins, roasts, tortillas

Bread. Bread? Bread. It is approximately 1/2 inch thick and disgusting.

Let this be an example of why you should ALWAYS DOUBLE CHECK YOU'VE PUT EVERYTHING IN YOUR RECIPE!

Apparently the 2 cups of all purpose flour was important. Whatever.

Oil: the Staple of Life

Ok, I just have to do a public service announcement to tell you all how delicious the last 2 meals we've eaten have been. Brag, brag, brag.

Artichokes are on a great sale at Buy Low for $.79 through Tuesday and I wanted to make something a little different then the boil-them-forever-and-then-dip-the-leaves-in-salted-butter meal, which is so good too.

I have to give this recipe here an A. First you half them, boil them for 15 minutes, and then BBQ them while basting them with this delicious olive oil/lemon/garlic sauce. Mmmm. They are just good. If you don't have a BBQ then there are some comments in the recipe that talk about broiling them in the oven.

How could this not be good? BBQed and slathered in garlic oil? That's a sure fire recipe for goodness if I've ever heard of one.

This Sesame Chicken turned out awesome, better than most Chinese restaurants for sure. I'm really excited about this new blog, BlogChef, that my little sis introduced me to. After having this chicken I can't wait to try other stuff she has posted, which is mostly Asian and Mexican. FYI: BlogChef has been added to my Recipe Blog list to the right.

This is another A meal in my book. It's really pretty easy: slice up the chicken, let it marinate for 1/2 hour while you get everything else ready, mix up the batter, mix up the sauce, batter the chicken, fry it, pour the sauce on and eat, eat, eat.

A couple things on it: the "marinade" is not what I think of as a marinade. It took me reading the recipe a few time to be convinced that I wasn't missing a bunch of liquid. It's just not very much of anything but it worked.

Also, next time I would double the sauce. I used a pound of chicken and while there was enough to coat the meat, I just wanted some sauce for my rice. I also threw in a dash of sesame oil in this to give it a bit more sesame flavor. I love that sesame oil- it is so yummy!

So what I'm saying here in this post is that I'm sure I've put on 5 pounds in the last 2 days but it was totally worth it. Where would the world be without oil? I shudder to think of it.

City Deals

Ok, I know I'm a pest about this City Deals website, but it is a killer deal if you ever eat out. I've done Restaurant.com for gift certificates and have not been too impressed with them: it is a bit confusing to use and there are NEVER any restaurants participating within a state of me.

City Deals is super easy, you just have to plan ahead. Just scan through their list of restaurants and click on anyone you want. There's tons of restaurants listed, in addition to other things like spas and activities. The gift certificates come in the mail within a few days (last time I ordered it took them like 2 days!).

It's a great way to try out new places like the Steak and Everything Grill: $25 gift cert for $12.50 or reduce your cost at places you already go to, like Dominoes Pizza: $14 gift cert for $11.20.

Right now, in addition to their great discounts there are a couple codes to reduce your total even more. Enter both the codes pinchingpennies and summerfun for free shipping, 10% off, and $5 off!

I completely sound like a paid sponsor, but I'm not. I just have really loved this site.

thanks pinchingyourpennies for the codes!

Moneymaker Cereal

Smiths has certain Kellogg's cereals on sale this week for $1.97, a decent price to start with. There are some good coupons out there that make it even cheaper. Also, when you buy 3 a catalina (like a gift card) prints for $2 you can use on anything in the store in the next 2 weeks. When you buy 4 boxes, a $3 catalina prints and when you buy 5 or more boxes a $4 catalina prints.

Utahdealdiva has some great scenarios worked up here, along with printable and newspaper coupon matchups. Check it out if you're interested in this deal.

I bought 3 today and factoring in the catalina they ended up being $.60 a box, about my price point for cereal. What I didn't realize though was that I actually was making money by buying them!

On certain boxes of Kellogg's cereal there are codes for "Free Stuff," anything from a t-shirt to a free movie ticket!

By getting 3, I qualified for $5 in cash at the movie concession stand! Sweet! The details are on Kellogg's Toy Story page. I already have 2 free tickets to Toy Story 3 from this deal so it's looking like a super cheap date night is in my future.

Pizza on the Grill

We had BBQed pizza last night and I forgot how much I love it. Mmmm. Everything is better on the grill and pizza is no exception: crispy crust, smoky flavor, and just feelin' fancy!

The wonderful thing about pizza is that you can slap anything you've got on top, making for a great food storage-using meal. I happened to only have cheddar (fresh market), pepperoni (smiths forever ago), and Classico pasta sauce (target- used the jar for pasta, pizza, and meatball sandwiches). Not very complicated but still good!

The original recipe had some yummy combo suggestions.
  • Pepperoni Pizza: brush dough with olive oil, then top with fresh mozzarella cheese, pepperoni, and some tomato sauce. Sprinkle with thinly sliced spinach, grated parmesan, coarse sea salt, and red pepper flakes
  • Mediterranean Pizza: brush dough with olive oil, then top with cubed fontina cheese, slices of salami, quartered marinated artichoke hearts, and slivered kalamata olives. Sprinkle with diced fresh tomatoes and parmesan. Add torn fresh basil leaves before serving.
  • Sausage Pizza: brush dough with olive oil, then top with grated white cheddar cheese, cooked and sliced link Italian sausage, and some tomato sauce. Sprinkle with thinly sliced red onion, parmesan, coarse sea salt, and crushed red pepper flakes. Add torn fresh basil before serving.

Pizza Dough
Makes enough for four 12 inch pizzas
Total time: 15 minutes + 2-3 hours rising

1 cup warn water
1 Tbsp sugar
1 pkg yeast (2 1/4 tsp)
2 1/4 cups all purpose flour
1 cup cake flour
1 Tbsp kosher salt
2 Tbsp olive oil

Combine water, sugar, and yeast. Proof until mixture turns foamy, about 5 minutes.
Mix flours and salt in the bowl of a stand mixer.
Add oil to yeast mixture, then pour into flour mixture. Knead dough on low 10 minutes. (If kneading by hand, knead dough the same amount of time)
Place dough in a lightly oiled bowl, turning dough to coat surface. Cover dough with oiled plastic wrap. Let rise in a warm place until doubled, about 2 hours.
Punch dough down and divide it into four balls, pinching the bottoms closed. Cover with plastic wrap and let rise in a warm place another hour.

Or you could be lazy like me and just throw it all in the bread maker and select the "dough" cycle. It was all ready to whip up when I got home from church. Nice.

Grilled Pizza
  1. Roll out the dough into 4 12-inch thin crusts on a lightly floured surface
  2. Get all of the ingredients ready. I put them all on a cookie sheet and bring them next to the grill. This pizza cooks pretty quick so there's not much time to mess with this later.
  3. Preheat one side of grill to medium-high, the other side to low. Place dough over hot side, close lid, and cook 2-3 minutes. The crust will bubble and have grill marks on the bottom.
  4. Use tongs to flip it over and move it to the cooler side of the grill. Brush crust with olive oil- it adds flavor and helps with the crispy texture.
  5. Add toppings. Keep the amount of toppings you put on light so they will cook quickly. Return pizza to hot side of the grill for 4-5 minutes.
  6. The pizza is done with the cheese is melted. I use the back of a cookie sheet to get it off the grill.

This makes quite a bit. We only ate 1 of the pizzas for dinner and had 3 left over. You could totally freeze 1/2 of the dough to use another time- just pull it out at lunch to use at dinner.

I got this recipe from Cuisine at Home magazine.

Free is good. And if you don't need or want it, I'm sure you can find someone that would, including the food bank.

There isn't a $5/$25 right now but if you sign up for Rite Aid's Wellness program you can print one there. There's also a $5/$20 coupon if you watch enough 30 second commercials on Rite Aid's Video Value site over here.
