5/20 menu

Here's the menu for the week.

Menu:
  • Meatball sandwiches (homemade buns and meatballs)
  • pork tacos
  • Denver omelet americas test kitchen family cookbook p.260
  • orange chicken
  • pasta bake (homemade sauce)
  • spanish roasted tilapia
Sides:
  • homemade fries
  • harvest grains
  • wild rice
  • mashed potatoes
  • rolls
  • fruit
  • veggies

Need:
  • fresh fruits and veggies, including one orange (buy low wednesday deals)


I love that I don't have to spend a ton of money for any of these meals. Instead I stock up on stuff when its cheap/free and then plan my menu around what I've already got.

  1. What's your meatball sandwich recipe? I got some buns at the hostess outlet store yesterday- which is kind of by your house and REALLY cool, and they had 8 count wheat buns for .55 a bag or 2 for $1. So now i need to make something tonight with them, but I wanted to make something different other than sloppy joes.

  2. I just made them last night and they turned out pretty good. I combine 1lb ground beef, 1/2 c bread crumbs, 2 T chopped onion, 1 clove minced garlic, 2 T parmesan, 1/2 t oregano, 1/4 t pepper, 3/4 t salt, 1/8 t paprika, 2 T spaghetti sauce, and 3 T chopped parsley. I mix them all up and roll them into balls then fry em up in a skillet. I liked NOT using a non stick skillet because after the meatballs are done, I pour off the grease and add a few cups of spaghetti sauce and scrape the rest of the meat off the pan into the sauce. Then I add the meat balls for a minute.

    Last night I experimented a little by combining that recipe with another one. I added a little buttermilk to the breadcrumbs 1st. The meatballs didn't stick together very well, but I'm not sure if was from the milk or the 70% ground beef, of which I'm not such a fan. Live and learn I guess...

    I've never been to the hostess outlet. Do they have twinkies? I LOVE twinkies.

  3. Thanks for the recipe Joy! Although now that I'm looking, it seems like hamburger is turning me off a little now, so I don't know if I'll be able to make it tonight, but definitely in the future. Eric loves meatballs. The hostess outlet does have twinkies, although not a great price right now. BUT they did have baseball cupcake things that are LIKE twinkies 4 for $1- two pack packages- so it's like getting 8 double sized twinkies for $1. It was yummy. You should check it out.
